Tzatziki Yogurt Sauce

Ingredients

1 c yogurt (greek or other plain)

1/2 cucumber, grated

1/2 tsp salt

1-2 cloves garlic, finely minced

2 tsp lemon juice

1/8-1/4 tsp pepper

1 tsp dill (dried)

1+ tbsp milk

Instructions

  1. Combine yogurt, cucumber, and spices. Mix well.
  2. Add milk 1 tbsp a time until thinned to desired consistency.

Turkey Gyros

Ingredients

2 lb ground turkey thigh

3-4 cloves garlic, minced finely

1/2 medium white onion, minced finely or grated

2 tsp salt

1 tsp black pepper

1/2 tsp ground rosemary

1/2 tsp thyme

2 tsp oregano

1 tsp cumin

1 tsp marjoram

1 tsp coriander (ground)

Instructions

  1. Preheat oven to 425 F.
  2. In a large bowl, mix turkey meat with all remaining ingredients until spices are evenly distributed throughout. A large metal spoon works great for this!
  3. Line a large loaf pan with parchment paper. Fill with turkey mixture.
  4. Get a cookie sheet and a 9″ x 13″ baking pan. Place loaf pan in the baking pan on top of the cookie sheet. Pour water in to the baking ban until about 1/4″ under the top, to create a water bath.
  5. Place your pan stack in the oven and bake for 75-90 minutes, until a meat thermometer inserted in the center reads 165 F.
  6. Remove from oven. Cool slightly (for now) or completely (for later). When ready to eat, slice loaf in 1/8-1/4″ slices. Brown in a frying pan over medium with butter for 3-4 minutes on each side. Serve with tzatziki and pita or salad.

Berry-Cherry Reduction

Ingredients

1 1/2 c frozen cherries

2 c frozen strawberries, slightly thawed and sliced

3 tbsp honey or agave nectar

1 tbsp lemon juice

1/4 c water

Instructions

  1. Combine cherries, strawberries, honey, lemon juice, and water in a 2 quart saucepan.
  2. Bring to a boil over medium heat, then reduce to low.
  3. Simmer for about 90 minutes, until thickened and the fruits have mostly lost their structure.

Meatloaf (Turkey or Chicken)

Note: I have made this many times with both ground turkey breast and ground chicken thigh. Though I have not tried ground chicken breast, my guess is that would work just fine.

Ingredients

1.5 lb ground turkey breast or ground chicken thigh (see note above)

8 oz mushrooms, minced or chopped as small as possible

3/4 c yellow onion, diced small

2 cloves garlic, minced

1 c regular, gluten free, or chickpea breadcrumbs (or 3/4 c whole wheat)

3/4 tsp thyme (dried)

1 1/4 tsp salt

1/2 tsp pepper

1/3 c milk (whole, grass-fed is best)

1 tbsp worcestershire sauce (vegan or regular)

1/4 c dry sherry

7 tbsp ketchup, divided in to 3 and 4 tbsp

2 eggs

1-2 tbsp ghee, butter, or olive oil

Instructions

  1. Heat ghee/butter/olive oil in a medium skillet over medium heat. Add the onion and cook for 3-5 minutes, until it begins to soften.
  2. Add the mushrooms, thyme, salt, and pepper. Stir. Cook for 8-10 minutes, until mushrooms have given off a lot of their moisture.
  3. Add garlic. Cook for 1-2 minutes, until fragrant.
  4. Add dry sherry and cook until it has mostly evaporated, 3-5 minutes. Turn off heat and transfer the mushroom mixture to a large glass/metal bowl to cool for about 10 minutes.
  5. Preheat oven to 400 F.
  6. Once the mushrooms have cooled, add 3 tbsp ketchup and the worcestershire to the bowl, then stir. Add the breadcrumbs, then stir. Add the milk and stir. Finally, add the eggs. Mix very well.
  7. Add the ground meat to the bowl and mix thoroughly. It helps to use a large fork or your hands to get everything evenly combined.
  8. Line a large loaf pan with parchment paper. Transfer mixture to loaf pan and spread evenly. Coat with remaining 4 tbsp ketchup.
  9. Bake for 60-75 minutes, until a meat thermometer inserted in the center reads 165 F.

Strawberry Protein Milkshake

*Makes 1 large or 2 small protein milkshakes

Ingredients

1 1/2 c frozen strawberries

2 tsp honey/agave, or 1 tbsp berry reduction

1 scoop vanilla rice protein (unsweetened)

3/4-1 c hemp milk (or other milk)

1/2 tsp vanilla extract

Instructions

Combine all ingredients in blender. Blend until creamy, adding more milk if necessary.
