30 Minute Biscuits

Ingredients

3 c flour (all purpose)

1 tbsp baking powder

1.5 tsp salt

1 tbsp honey (or other liquid sweetener)

1 tbsp plant milk

12 oz unsweetened sparking water (always Waterloo in our house)

Instructions

  1. Preheat oven to 375 F.
  2. Combine flour, baking powder, and salt in a large bowl. Mix to make sure all the dry ingredients are evenly distributed.
  3. Add the honey, plant milk, and sparkling water. Stir immediately, just until the dough comes together and there is no loose/dry flour. You don’t want to over-mix. (I try to stir 30 times or less.)
  4. Line a cookie sheet with parchment paper. Drop the dough in rounds on the cookie sheet (about 1/4-1/3 c per biscuit), shaping slightly as needed. I aim to make 12 biscuits, but you can make them smaller or larger. I never measure, just eyeball the spoonfulls. The biscuits don’t all have to be perfectly even, they’ll bake beautifully anyway!
  5. Bake for 22-25 minutes.

Aloo Gobi

Ingredients

  • 2 tbsp Ginger-Garlic Paste (see below) or 1 tbsp garlic paste + 1 tbsp ginger paste
  • 1 tbsp ground coriander
  • 1 tsp cumin seeds
  • 1/2 tsp ground cumin
  • 1½ tsp turmeric
  • 2+ cups water
  • 2 tbsp peanut oil
  • 1 large serrano pepper, split down the middle leaving halves attached
  • 1 small head cauliflower, cut into small florets
  • 2 large potatoes, peeled and cut into ½” cubes (yukon gold or russet)
  • 1 tsp salt
  • cilantro leaves, to garnish
  • rice, to serve

Instructions

  1. Combine Ginger-Garlic Paste/coriander/turmeric/ ½ c water in a small bowl and mix well.
  2. Warm the oil in a large pot over med-high. Add serrano and cook for 30 seconds. Add cumin seeds and cook another 30 seconds. Add the Ginger-Garlic mixture/½ c water. Cook until slightly thickened and darker in color (~2 minutes).
  3. Add potatoes. Stir to coat. Add salt and ½ c water. Cover. Cook over med for 20 min, stirring occasionally and adding more water if necessary.
  4. Add cauliflower and ½ c water. Recover and continue simmering (20-40 min) until vegetables are tender and sauce is thick, stirring occasionally and adding more water if necessary.
  5. Serve over rice, garnished with cilantro.

Ginger Garlic Paste

Ingredients

  • 1/2 c garlic cloves
  • 1/2 c ginger
  • 1/4 cup canola oil

Instructions

  1. Peel garlic. Peel and slice ginger.
  2. Combine all ingredients in a small food processor. Blend until mostly smooth.

Apple Pie

Ingredients

6-7 cups apples, peeled and sliced (not too thin because they will turn to mush as they cook)  **I prefer to use about half green (granny smith), half red (usually gala) apples

1/2 – 1 cup sugar

1 – 2 tbsp flour

1/8 tsp salt

1/2 tsp lemon zest (optional)

1 to 2 tsp lemon juice

1/4 tsp nutmeg

1/2 – 3/4 tsp cinnamon

1 tbsp butter

pie crust (store-bought or homemade)

Instructions

  1. Pour lemon juice and zest over apples in a large bowl. Stir to coat.
  2. In a smaller bowl, mix together sugar/flour/salt/nutmeg/cinnamon. Pour over the apples. Stir to coat.
  3. Pour apples into pie pan and pack them tightly. Sprinkle with any remaining sugar mixture/butter cubes.
  4. Cover with top crust. Press edges down with a wet fork.
  5. Cook at 375* for 45-60 min, until apples are cooked the way you like.

Notes

**Use 1 c sugar for tart green apples, less if using a sweeter variety.

**Cover a cookie sheet with foil and put your pie on it in the oven to catch any juice that boils over, so it doesn’t trash your oven.

Applesauce

Ingredients

5 green apples

3 red apples

3 tbsp lemon juice

1/2 tsp cinnamon

1/2 c honey (or agave nectar)

3 1/2 c water

Instructions

  1. Wash and chop apples.
  2. Place apples in a large saucepan with remaining ingredients.
  3. Heat over medium-high until bubbling, then reduce heat to medium low and continue simmering uncovered for about 90 minutes (longer if you want it softer, less if you want a chunkier applesauce).

Arugula & Kale Chopped Salad

Ingredients

Baby arugula

Baby kale

Radishes

Green onion

Feta (optional)

Salt

Pepper

Olive oil 

Lemon

Instructions

  1. Chop arugula and kale. Slice green onion. Slide radishes, then halve/quarter (depending on size).
  2. Toss arugula, kale, and green onion together in a bowl. Drizzle with olive oil (1-2 tsp per serving) and toss well. Sprinkle with salt and pepper, then a squeeze of lemon juice. A little goes a long way! Toss again.
  3. Divide into serving bowls, if desired. Top with sliced radishes, crumbled feta, and fresh ground pepper.

Austin Soda Bread – Quick yeast-free bread loaf!

Ingredients

3 c flour

1 tbsp baking powder

1 tsp salt

2 tbsp honey (or other liquid sweetener)

1-2 tbsp milk (cashew-hemp is my favorite)

12 oz plain seltzer or sparkling water (always Waterloo Original in our house)

Instructions

  1. Preheat oven to 350 F.
  2. Combine all dry ingredients in a mixing bowl. Stir together.
  3. Add remaining ingredients. Stir to combine well, but don’t over-mix. It will be a thick dough, a little lumpy (not smooth) – don’t worry.
  4. Transfer dough to a parchment-lined (or greased) loaf pan, spreading evenly if necessary.
  5. Bake for 60 minutes.
  6. Allow to cool at least minutes before slicing!
